Dairy Free Vanilla Pudding

Awhile back I discovered a secret ingredient… cashews.  It is quite amazing the things you can produce with soaked cashews.  This is the first of many cashew recipes I will be posting.  If you have not heard of this or are put off by the idea of nuts in a “pudding”, I urge you to give this recipe a try!  This raw and dairy free dessert is so simple and quick to make.  You will feel guilt free indulging in this healthy Vanilla Pudding.

Dairy Free Vanilla Pudding

  • 2 cup raw cashews, soaked overnight (minimum 6 hrs)
  • 1/2 cup honey or agave
  • 3/4 cup water  (use 1/2 cup water for a thick custard texture)
  • 1 vanilla bean
  1. Place all ingredients into high powered blender or Vitamix.
  2. Blend until smooth.
  3. Refrigerate overnight before serving.  (better to make ahead of time to allow the vanilla flavor to develop)

    I made this on the weekend and it is very good. My husband was even okay with it too :)
    Do you think this recipe can be frozen? There’s still a fair bit left and what with the cost of the raw cashews I would certainly not want it to go to waste.

  • This is way awesome! I did find it a little costly to make, however, I have a daughter with severe food intolerances and she is also extremely under weight. I am hoping to use this to help her gain some weight back :0) We made it together and it is delicious already, before even refridgerating! Do you have any suggestions for making it in a chocolate flavor? I would guess adding some cocoa powder but just not sure how much. Any suggestions would be greatly appreciated!

    • So glad you and your daughter enjoyed the pudding! It is costly, because of the raw cashews, but the results make it worth it :) I have been making a chocolate version for a little while now, and will post it this week. It is delicious! I am so glad that my recipes have helped you feed your daughter with her food allergies. At least she is able to have nuts, and hopefully they will help her to gain weight! Thanks for the feedback!

  • Finally got around to trying this! I cut the recipe in 1/2 and it worked out great! I didn’t have vanilla bean so I added a teaspoon of vanilla extract. I also added a pinch of ground cardamom. So great!

  • Hey, I wonder if Chia Seeds would be a great addition to this pudding to thicken it a bit. I am going to try it and see if it works.

  • Could you use cashew butter instead of cashews? I don’t have a high power blender (only a Bullet – don’t think it could make cashew butter of out cashews smooth enough). If I could use say 1.5 cups of cashew butter and 1 tbsp vanilla, this might work for me! Any insight would be helpful.

  • Michelle, my daughter has a life-threatening (anaphylactic!) allergy to cashews, pistachios and probably mangoes (all related in the tree nut family). Is there anything I can substitute for the cashews? Other nuts seem to be okay (except for peanuts), so maybe I could use coarse almond meal instead (quantity?), but is there a non- nut option that might work, too? Thank you!
    I have been hoarding your recipes bc I am going to go grain-free due to severe gluten intolerance (systemic issues, including joint pain, fatigue, GI problems, AND painful skin blisters (dermatitis herpetiformis), and your advice and ingredients make the most sense to me — and they look delicious! Now I just need to start trying them! :)
