Easy BBQ Chicken

This is my quick version of BBQ.  I chose chicken because it tenderizes quickly and is inexpensive.  I prefer to use boneless, skinless thighs for added flavor and moist texture.  But chicken breast would also work.  I don’t normally use products from a can, but the convenience is nice sometimes… feel free to use fresh pineapple if you have it on hand.  You can also prepare this in a crockpot if you prefer, however my dutch oven does the job and very quickly!

Easy BBQ Chicken

  • 1 onion, thinly sliced
  • 5 cloves garlic, chopped
  • 1 20 oz can of crushed pineapple
  • 2 tablespoons tomato paste
  • 1/2 cup apple cider vinegar
  • 1/4 cup honey
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 3 lbs boneless, skinless chicken (thighs or breasts)
  1. In a dutch oven, heat 2 tablespoons oil.  Add onions and saute until translucent.
  2. Stir in garlic, cook 1 minute or until fragrant.
  3. Add pineapple, tomato paste, apple cider vinegar, honey, salt and paprika.  Stir well to combine.
  4. Add chicken.  Bring mixture to a boil.
  5. Cover and simmer on low for at least 1 hour, preferably 2 hrs.
  6. Use two forks to gently pull chicken apart.  Allow meat to absorb the liquid and flavor.
  7. Serve on your favorite gluten free bun with some coleslaw if desired.

I’ve been allergy testing on my daughter, thinking she had a dairy allergy, but now I’m thinking it’s gluten. Thank you for posting SO many recipes! This will make feeding her a lot less difficult, and I can’t wait for your bun recipe (my husband may die if I don’t give him bread).

  • Just made the BBQ chicken last night, and it truly is amazing. I made it with mostly chicken thighs, but threw in a few breasts I had in the freezer as well. The thighs pulled apart a lot easier – into a nice stringy texture. The breasts did OK but not as “pull-able.” I cooked it for 1.5 hrs and the flavor is delicious. Such a simple and wonderful meal!   • I make this recipe last night and it was fabulous. I roasted a chicken and a few breasts. I needed something different to do with what I had left since I would usually make some gravey and pour it over stuffing but I can’t do that any more since I have to eat GF. I loved it and so did my kids. I’m new to GF but your recipes give me hope that I’ll be successful. Thank you!!!
