Bacon, Apple and Cheddar Frittata


This simple breakfast is delicious.  You can’t go wrong with bacon and cheddar, but apples… in eggs??? Oh, believe me… it works.  Don’t leave out the scallions, they not only make a lovely garnish, but the fresh onion flavor brightens the dish :)

Bacon, Apple and Cheddar Frittata

  • 6 slices of bacon, cut into 1/2 inch pieces
  • 8 eggs
  • 2 apples, peeled and cut into 1/8 in slices
  • 1 cup, plus 1/2 cup shredded cheddar cheese
  • salt and pepper
  • scallions
  1. Preheat oven to 400.
  2. Heat an oven proof skillet, add bacon and cook until crisp. Turn burner down to low.
  3. Remove bacon and grease, reserving 1 tablespoon of grease in the skillet.
  4. In a bowl, combine eggs and 1 cup cheese. Season with salt and pepper.
  5. Pour egg mixture into hot skillet.
  6. Arrange apple slices on top, sprinkle on bacon and top with remaining 1/2 cup cheese.
  7. Bake in oven for 20-25 minutes until set.
  8. The frittata should slide right out (thanks to the bacon grease!) onto a serving dish.
  9. Serve warm, or at room temperature.  Garnish with chopped scallions.

*yields 4-5 servings

    This was really good, the apple made for an interesting addition, but next time, I’ll probably use onion instead. I’m not a big fan of fruit with savory dishes.

      Thanks Tom, I think apples and eggs is interesting and not all will love the combo. You can definitely use any other veggie, like bell peppers or onions in it’s place :)

    First let me say, I love your blog! It is my go-to place for recipes that are gf and you don’t want people to be able to taste the difference. I really appreciate each and everyone. I do love it when you give additional information such as how long the dish will keep or it can be frozen. In fact, I was wondering if this could be adapted to a casserole that could be frozen. I have a large family and I am always looking at ways to prepare food in advance. Thanks!
