Braised Short Ribs

Braised Short Ribs

As I have shared before, braising is one of my favorite ways to prepare meat.  It becomes succulent and tender, making the meat just fall off the bone.  Short ribs are fairly inexpensive and are a wonderful meat to braise because you get all of […]

Rustic Peach Galette

Rustic Peach Galette

I love making galettes.  Simple to prepare and impressive to guests.  You can fill it with whatever fruit is in season. Right now peaches are so ripe and sweet, making it the perfect fruit for this gluten free galette.  Make these ahead of time and serve with cinnamon whipped cream or vanilla ice cream.  This recipe here is for making 4 mini galettes, or one large galette with the dough.  Just skip the step of quartering the dough.

This crust is buttery, flaky and crispy all at the same time.  Be sure to use ripe peaches for best results!  No one would ever guess that this dessert is gluten free, grain free and even healthy!

Mini Rustic Peach Galettes

Dough

  • 4 tablespoons melted butter
  • 3 tablespoons honey
  • 1 egg white
  • 2 cups almond flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda

Filling

  • 6 peaches
  • 1/2 teaspoon cinnamon
  • 1 teaspoon coconut flour

Glaze for crust

  • 1 egg yolk
  • 1 tablespoon honey

Glaze for peaches

  • 1 tablespoon honey
  • 1 tablespoon butter/coconut oil
  1. Stir together melted butter and honey.  Add egg white.  Add remaining dough ingredients.  Stir well to combine.  Shape dough into a round disk and cut into 4 wedges.  Shape each into rounds, flatten, cover and refrigerate.
  2. Bring a large pot of water to a boil.  Gently drop in peaches, boil for 1 minute and shock in a bowl of ice water.  The skin should remove very easily right away by peeling back with a knife.
  3. Preheat your oven to 325 and begin to assemble your galettes.
  4. Slice your peaches thinly.  Toss them with the cinnamon and coconut flour.  Set aside.
  5. Roll out each disk of dough to a 6-7 inch round.  Gently rub each round with a little bit of coconut flour (this will help prevent the crust from getting soggy)
  6. Decoratively arrange your peaches on each round, leaving a 1 inch border.  With a small offset spatula fold up edges over the peach filling.  This dough is very forgiving, don’t worry if it cracks, just push it back together.
  7. Stir together the egg yolk and honey and brush around the edges of your dough.  This will make for a nice golden crust.
  8. Bake at 325 for 25-30 minutes until golden brown.
  9. Remove the galettes from the pan and place them on a cooling rack.
  10. Glaze the peaches with the honey/butter mixture.
  11. Allow galettes to cool and serve at room temperature.

Creamy Cauliflower “Risotto”

Creamy Cauliflower “Risotto”

This is my basic Cauliflower “Risotto” Recipe, that has become a family favorite.  My children actually prefer this “risotto” over rice.  Shhh…. don’t tell my Filipino side of the family!  It’s rich, flavorful and a wonderful source of Vitamin C and Manganese, two powerful antioxidants.  […]
