Cilantro-Lime Vinaigrette

I’m a big salad eater, so I am always throwing together different dressings.  This one was so tasty, I just had to share. Great on salads, drizzled on grilled chicken, fish or veggies.

This simple dressing is refreshing.  I love the burst of flavor with the fresh lime juice.  For best results, be sure to use only the freshest ingredients when making this vinaigrette~

Cilantro-Lime Vinaigrette

  • juice of 2 limes- about 1/4 cup
  • 1 tablespoon red wine vinegar
  • 3/4 cup oil
  • 1 tablespoon honey
  • 1/2 cup fresh cilantro
  1. Combine all ingredients in blender or with handheld immersion blender.
  2. Serve immediately or keep in fridge for up to 1 week.

  • Ok…I am not sure how in the world I missed this recipe! It’s definitely being made this coming week!! I just found another dressing that I’ve gotten hooked on…and even expanded it to use as a “sauce” for rice noodles with chicken and cashews. (yea, I’m a little weird when it comes to trying foods…I can come up with some crazy combos!!) Anyway…here’s the dressing if you ever want to try it. http://www.dailygarnish.com/2011/01/my-favorite-homemade-salad-dressing.html

    • I have used both olive oil and grapeseed oil. It works with whatever you have in your pantry :)

  • What a quick and delicious vinaigrette! I was getting Thanksgiving menu ideas from your website and stumbled upon this recipe. I quickly made it up as I had all the ingredients on hand and poured a generous amount over our steamed veggies tonight (carrots, zucchini & peas)… absolutely delicious!! The children came back for seconds, it was such a lovely change from plain steamed veg! :)
