Zesty Tomato and Black Bean Salad

This refreshing salad is the perfect compliment to any summer meal.  Black beans, ripe tomatoes, red onions and jalapenos are tossed in a brightly flavored vinaigrette.

Zesty Tomato and Black Bean Salad

  • 1 red onion, finely chopped
  • 1 jalapeno, seeds removed and finely diced
  • 1 lb cherry or baby heirloom tomatoes, halved
  • 3 cups cooked black beans (about 2 15oz cans)
  • Cilantro-Lime Vinaigrette
  1. Prepare the vinaigrette.
  2. Combine remaining ingredients.  Toss in dressing.
  3. Refrigerate overnight for best results.  This allows time for the flavors to develop.
  4. Garnish salad with fresh cilantro.

    I can’t wait to try this when my tomatoes start piling up here!! :) I just made my black bean salad for dinner. (love that stuff….but I am sure in a month I’ll be looking for a change)

    What brand of black beans do you use? I once tried Whole Foods 365 brand and had a gluten-reaction to them, probably because of cross contamination in the factory.
