Gluten Free Fried Chicken

Gluten Free Fried Chicken

I will admit there is no real gf substitute for Popeye’s fried chicken, but this recipe has met my needs for crispy fried goodness.  There really is nothing healthy about this except for the nutrients you get from the almond flour, coconut flour and the

Gluten Free Banana Pancakes

Gluten Free Banana Pancakes

These are great to make with bananas that are a bit past their prime.  Their natural sweetness enables you to skip the sweetener when making this batter.  I like to serve these fluffy pancakes with cranberry sauce, toasted pecans and a drizzle of honey. Gluten

Gluten Free Honey Pecan Pie

Gluten Free Honey Pecan Pie

For those who are trying to avoid Karo (HFCS), here is a great and tasty alternative for your traditional pecan pie.  All of my family tried this, and even my dad said it tasted good and not “different” at all.  This is a pretty big deal, as my dad thinks most of my stuff tastes too “healthy” lol.  Give this recipe a try, you won’t be disappointed!  My daughter Jasmine was quite pleased with this pie at her 6th birthday!

Honey Pecan Pie

  • 1 1/4 cups honey
  • 3 eggs
  • 4 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup – 1 cup pecan halves
  • 1 unbaked pie crust, chilled

  1. Preheat oven to 325.
  2. Whisk together honey, butter, salt and eggs.
  3. Add chopped pecans and pour into unbaked pie shell.
  4. Arrange pecan halves on top. (this is more of a decorative option)
  5. Bake at 325 for 40-45 minutes or until filling is set.  Cover crust with foil or pie crust shields after 15 minutes.
  6. Let cool and serve plain or with whipped cream.
Gluten Free Pumpkin Leek Soup

Gluten Free Pumpkin Leek Soup

I can’t get enough of pumpkins, squash and all the fun fall flavors.  Soup is a cozy and warming dish, perfect for fall.  We don’t eat soup a lot in our house, it’s not exactly kid “friendly”, but they thought this one was pretty good….

Gluten Free Cranberry Sauce

Gluten Free Cranberry Sauce

This is your basic cranberry sauce. I like to cook it down until it becomes a smoother “jam-like” consistency.  This sauce is very versatile, I like to serve it up on banana pancakes with toasted walnuts, or mix some into buttercream for a vibrant and fresh
