Vidalia Onion Dip

I discovered this delicious dip through one of my best friends, Leah.  She, along with her mother and sister all have Celiac.  I am always excited to go to their family gatherings, as there is always a wonderful gluten free selection of goodies.  My absolute favorite, is their families’  Vidalia Onion Dip recipe.  For some reason people who don’t like onions, love this dip.  People (including myself) who do not like swiss cheese, love this dip.  I don’t get it.  But who cares, this recipe is simple and it rocks!

Vidalia Onion Dip

  • 1 cup chopped vidalia or sweet onions
  • 1 cup shredded swiss cheese
  • 1-2 tablespoons mayonnaise
  1. Preheat oven to 375.
  2. Mix ingredients, adding just enough mayonnaise to combine.
  3. Spread into glass baking dish into a thin layer.
  4. Bake for 20-25 minutes, until bubbly and slightly dark around the edges and top.
  5. Serve with tortilla chips or your favorite gluten free crackers.

*this recipe is for an 8-9 inch glass dish

*for 9×13 dish, double the recipe

  • GREAT FOR A SUPER BOWL PARTY!

    Seriously people. Easiest recipe ever and it is requested for parties ALL. THE. TIME. If you go too heavy on the mayo (get wild and start blopping it in), it’ll get grease puddle on top, which is gross (but can be sopped up with paper towels).

    It is much better when it’s spread less to about 1 inch in a pan because the best part is when the top gets golden brown. It just doesn’t turn out quite right when it’s over an inch thick. Just get another pie dish out!

    (Also, total aside, chopped vidalia onions freeze quite well. So when you make it, double up on the onions and freeze half so that you’re ready for the next party.)
