Homemade Pumpkin Puree

I’ll admit it’s much easier to pop open a can of pumpkin puree, but the fresh flavor of homemade pumpkin puree just can’t be beat.  Make a large batch and freeze any leftovers for later.  Who said you can only eat pumpkin in the fall??

Homemade Pumpkin Puree

  • 2 sugar pumpkins, washed and stem removed
  • 1/2 cup water
  1. Preheat your oven to 400.
  2. Cut your pumpkins in half, as you would any other squash.
  3. Scoop out the seeds, scraping with a spoon.  Set seeds aside for later use.
  4. Place pumpkins flesh side down onto a sheet tray.
  5. Pour water onto tray.
  6. Roast for 40-50 minutes, depending on size of pumpkins, until tender.
  7. Remove from oven and allow to cool down enough to handle.
  8. The skin should peel right off.  Place flesh into food processor in batches and puree until smooth.
  9. Store in an air tight container in the fridge for 1 week or freeze.

*yields approximately 8 cups pumpkin puree, too much?  just roast one pumpkin.

  • Just wondering how to use the purée from frozen? Do you thaw it first or use it frozen? If thawing, for how long/in what conditions (shelf, fridge?)?

    • To use frozen Pumpkin I would thaw in the refrigerator for about 24 hours. Or if you need it faster and it is already in a microwave safe freezer container you could microwave it on a thaw setting. You can usually set the thaw time on microwave based on how many ounces. If thawing in microwave be careful not to go too long and over cook it. Halfway through thawing time in microwave I would take a fork to stir and breakup frozen chunks to check it. Hope this helps!
